Egg masala

Egg masala is simply the best Indian food dish owing to its boiled eggs that are cooked in thick and spicy gravy. You can serve it with steamed rice, chapatti, or Naan bread. Below is a quick and straightforward recipe for making egg masala at home. 

Ingredients

For Boiled Eggs:

Eggs: 4 pieces

Water: Enough to simmer the eggs

Salt: 1/2 tbs

For the Masala:

Oil: 2 tables spoons

Onions: two medium diced onions

Tomatoes: 2 tomatoes

Ginger-garlic Paste: 1 teaspoon

Green Chilies: 2 (slit)

Turmeric powder: 1/4 tsp

Red Chili Powder: 1 tsp

Coriander powder: 1 tsp

Garam Masala Powder: 1/2 tsp

Cumin Seeds: 1/2 tsp

Yogurt: 2 tablespoons 

Water: 1/2 cup 

Salt: As all of us prefer 

Fresh coriander claws: For garnishes.

Instructions

Step 1: Boil the Eggs

The eggs should be rinsed gently before being placed in a saucepan together with salt and a tablespoon of water. 

Boil the eggs for about a period of 10 minutes. 

Soak the eggs in cold water and remove their shells afterwards. 

Gently scratch the boiled eggs using a prick fork but this is an optional step.

Step 2: Prepare the Masala

In a pan, heat some oil and add the cumin seeds until they also get mildly hot. 

Dump the onions and cook until they get golden and brown in color.

Keep stirring the ginger-garlic paste till the raw aroma of the paste goes off completely. 

Add tomato puree and cook until the oil oozes out of the mixture. 

Step 3: Add Spices 

Add in turmeric, red chili powder, coriander powder, and salt. Combine well.

After that, put the masala on low flame and let it be for 5 minutes while stirring it from time to time. 

Step 4: Cook the Eggs 

Put the boiled eggs in the masala in such a way that they are all well done. 

Add half a cup of water and cook for 5-7 minutes till the gravy starts bubbling. 

Finally, add garam masala and, if desired, cream or yogurt to achieve a sumptuous taste. 

Step 5: Garnish and Serve 

Garnish with fresh coriander leaves. 

Best served piping hot with either rice, chapatti, or naan.
