1. Vegetable Pulao

Ingredients:

  • 1 cup basmati rice
  • 1 cup mixed vegetables (carrot, beans, peas)
  • 1 small onion (chopped)
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 2 tsp oil or ghee
  • Salt and spices (turmeric, garam masala, etc.)

Method:

  1. Wash and soak rice for 15 minutes.
  2. Heat oil in a pan, add cumin seeds and bay leaf.
  3. Sauté onions and add vegetables.
  4. Add spices, salt, and the soaked rice.

Ingredients:

  • 1 cup rava (semolina)
  • 1 cup chopped vegetables (carrot, beans, peas)
  • 1 tsp mustard seeds
  • Curry leaves
  • 2 tsp oil
  • Salt and water

Method:

  1. Dry roast rava and keep aside.
  2. Heat oil, add mustard seeds and curry leaves.
  3. Add vegetables, sauté, and then add water (2 cups).
  4. Stir in roasted rava, cook until fluffy.

4. Egg Curry with Rice

Ingredients:

  • 3 boiled eggs
  • 2 cups cooked rice
  • 1 onion and tomato (chopped)
  • 2 tbsp oil (rice bran or sunflower)
  • Spices: turmeric, chili powder, garam masala

Method:

  1. Heat oil in a pan and sauté onions and tomatoes.
  2. Add spices and water to make a thick curry.
  3. Add boiled eggs and cook for 5 minutes.
  4. Serve with rice for a hearty lunch.

5. Aloo Paratha

Ingredients:

  • 2 cups whole wheat flour
  • 2 boiled potatoes (mashed)
  • 2 tbsp oil (mustard or sunflower)
  • Spices: salt, turmeric, red chili powder, and garam masala
  • Water (for kneading)

Method:

  1. Knead the flour with water to make a soft dough.
  2. Mix mashed potatoes with spices.
  3. Roll the dough into small circles, fill with potato mix, and seal.
  4. Roll again and cook on a tawa with oil until golden.
  5. Serve with pickle or curd.
