For Cooking Rice:
Basmati rice—1.5 cups (soaked for 30 minutes)
Water—5 cups
Bay leaf – 1
Cloves – 3
Green cardamom – 2
Salt—as per taste
For Kathal Curry:
Raw jackfruit (cut into pieces)—2 cups
Onion large (sliced)
Tomato—1 (chopped)
Ginger-garlic paste—1 tbsp
Curd – ½ cup
Green chillies—2 (slit)
Red chilli powder tsp
Turmeric powder – ½ tsp
Garam masala tsp
Biryani masala—1 tbsp (optional)
Salt—to taste
Mustard oil or ghee—3 tbsp
Fresh coriander and mint—chopped
🍽️ How to Make Kathal Ki Biryani
Step 1: Cook the Rice
Boil water with spices and salt.
Add soaked rice and cook until 90% done.
Drain and keep aside.
Step 2: Fry the Kathal (Jackfruit)
Heat oil in a kadhai.
Fry jackfruit pieces till golden and soft.
Keep them aside.
Step 3: Prepare the Masala
In the same oil, fry sliced onions till golden brown.
Add ginger-garlic paste; sauté well.
Add chopped tomatoes, spices, and salt. Cook till tomatoes are soft.
Add curd and mix properly.
Add fried jackfruit and cook everything together for 8–10 minutes.
Step 4: Layer the Biryani
In a big vessel, spread one layer of cooked kathal masala.
Add some rice on top.
Sprinkle chopped mint, coriander, and a few fried onions.
Repeat the layers.
Sprinkle 1 tsp ghee or rose water on top for aroma.
Step 5: Cook on Dum
Cover the pot tightly with a lid or dough.
Cook on low flame for 15 minutes.
Let it rest for 5 minutes before serving.
